Professional proofers: automatic, simple and user-friendly
CLM Bakery System’s tray-mounted pizza proofers can be customized in three ways: by configuring the number of trays, adapting tray size to dough weight, and integrating up to two flour dusters to optimize flour distribution both under and over the dough balls—minimizing flour waste.
- Automation and precision: dough balls are automatically placed onto pre-dusted trays.
- Optional dual flour dusters: a second duster can be added to flour the top of the dough balls, depending on dough type.
- Optimal process control: based on the selected recipe, the system automatically adjusts the flour dosage, proofing time, and humidity/temperature parameters to ensure uniform proofing.
Process efficiency: flour level sensors in the dusters notify operators when refill is needed. At the end of proofing, trays are automatically overturned to transfer dough balls to the next production stage.
